Braised Bok Choy PREPARATION
1 Boila large pot of salted water. Meanwhile, rinse the vegetables and cut them inhalf lengthwise. When water is boiling, put it. Bake for about 10 minutes.
2Drain the vegetables and dry with a paper towel while. Take a pan and fry thevegetables with butter. When they are golden brown, serve immediately with agrill.

Cheese andBeer Fondue Preparation
In a mixing bowl,combine the cheese and flour; toss to coat. Rub the bottom and sides of a heavysaucepan with the cut side of garlic; discard garlic. In the saucepan, over lowheat, combine beer and water until just warm. Gradually add small amounts ofthe cheese mixture, stirring constantly, until cheese is melted. Make sure eachaddition of cheese is melted before adding more. Stir in the mayonnaise, Worcestershire,dry mustard and horseradish. Cook and stir the mixture until heated through.Transfer to a fondue pot and place over fondue burner. Garnish with chives ifdesired. Spear the bread cubes or potatoes with fondue forks, swirling to coat.If the fondue thickens while standing, slowly add additional warmed beer.

1 lb Smoked andouille sausage-dice2 lb Velveeta cheese; dice,room-temp 30 minutes12 oz Can jalapenos; seed,dice1/4 c Butter1 c Onions; chop1/4 c Celery; chop1/4 c Red bell pepper; chop2 tb Garlic; dice4 c MayonnaiseSalt and cracked pepperLouisiana Gold Pepper Sauce1/4 c Parsley; chopo
JalapenoCheese and Sausage Dip Preparation
In a heavybottom saute pan, melt butter over med-high heat. Add onions, celery, bellpepper, garlic and andouille. Saute 3-5 minutes or until vegetables are wilted.Add jalapenos and continue tp saute 2-3 minutes more. Remove from heat andallow to cool. Pour the ingredients from saute pan into the bowl of a foodprocessor. Blend well until smooth. Place the blended ingredients in a largemixing bowl and add cheese and mayonnaise. Using a wire whisk, whip untilsmooth and of a dipping sauce consistency. Season to taste with salt, pepperand hot sauce. Sprinkle in parsley. Pour ingredients into a decorative bowl andheat to serving temperature in the microwave. Serve with garlic croutons, toastpoints or tortilla chips. This dip may be served cold.
