400 g fresh ginger

300+ 20 g of sugar

PREPARATION candied ginger

1Peel the ginger and cut sections of a 1/2 cm. Soak in cold water for 1/2 hour.

2Change the water and bring to boil for 5 minutes, change the water and repeat 2times (3 broths in total), this is the part that allows a bit tedious to have aless pungent ginger.

Cold Chicken Sesame Recipe

Ingredients

1 Cookedchicken (preferably-cold; deep-fried chicken)1/2 c Water1 ts Powdered mustard1 c Chinese parsley1/2 Head lettuce4 Scallion tops1 tb White sesame seeds1/2 ts Salt1 pn Sugar

Cold ChickenSesame Preparation

1. Strip cookedchicken from carcass and cut or tear meat in fine shreds. 2. Meanwhile boilwater and let cool. Then combine just enough with mustard to make a smoothpaste (about 2 teaspoons of water). Add to chicken and toss. 3. Discard toughparsley stems. Shred lettuce and green tops of scallions. 4. Heat a dry pan.Toast sesame seeds quickly and lightly. Then add to chicken and toss. 5.Sprinkle chicken with salt and sugar. Add scallions and half of parsley. Tossto mix thoroughly. 6. Line a serving platter with lettuce strips and arrangechicken on top. Garnish with remaining parsley. NOTE: Any cooked chicken can beused, but cold deep-fried chicken has the best texture for this dish.
