Chinese cumin beef-Chinese food and natural health for January 04

Chinese cumin beef

Ingredients

250g beef

150g onion Seasoning

3tbsp Shaoxing wine

4tbsp light soy sauce salt

2potato starch tbsp

 6 tbsp cumin Sunflower oil

10gchives

5gof ginger

1small chilli

1tbsp white sesame

15minutes

Steps:

1.Cut the beef into cubes of 1 cm square. Put them on a plate, add 1 c.à.csunflower oil, 3 tbsp Shaoxing wine, 2 tbsp light soy sauce, salt, 2 tbsp .spotato starch and 3 tbsp ground cumin. Mix them and marinate for 10 minutes.

2.Cut the onion into pieces, pepper in small circles, chop chives and ginger.

3.Heat the sunflower oil in a pan, when hot, add the beef and stir-fry quicklyover high heat. Once the color turns white oxen, remove them.

4.Heat the sunflower oil in the pan, add the chives, ginger and chilli. Sautébriefly and then add the onion. Sauté briefly and then add salt.

5.Add the oxen, 3 tbsp cumin 1 tbsp white sesame. fry for 1 minute. Add 2 tbsplight soy sauce and fry evenly. Serve.

8Dried black mushrooms

2ts Vegetable oil

1/2ts Crushed ginger root

1c Sliced broccoli

1c Sliced celery

1/2c Sliced bamboo shoots

1/2c Button mushrooms

1Green pepper; sliced thinly

1Tomato; quartered and seeded

1/2c Straw mushrooms

1c Chinese celery cabbage

2tb Cooking wine

1/2c Chicken stock (see wonton

-souprecipe)

1tb Cornstarch; mixed with

2tb Cold water

1ts Light soy sauce

1/2ts Crushed fresh garlic

Saltand pepper to taste

1ts Sesame seed oil

MixedChinese Greens Preparation

Soakthe black mushrooms in hot water 10 minutes. Drain and remove tough stems. Heatthe oil in a wok over high heat. When it is medium-hot, add the ginger andgarlic and stirfry a few seconds. Add the broccoli, celery, bamboo shoots,black mushrooms, button mushrooms, green pepper, tomato, straw mushrooms andcelery cabbage. Stir-fry 3 minutes. Add the wine and Chicken Stock. Stir in thecornstarch mixture until thickened. Add the soy sauce, salt, pepper, and sesameseed oil. Stir to mix and serve immediately. Don”t overcook the vegetables.They should be crisp, yet cooked.

1tb Shortening

3c Cabbage; finely shredded

1c Celery; chopped

1md Green Bell Pepper; chopped

1md Onion; chopped

1ts Salt

1/8ts Pepper

ChineseStyle Cabbage Preparation

Heatshortnening in skillet. Drop in vegetables, stir well. Cover tightly. Steam 5minutes on medium heat, stirring several times. Season with salt and pepper.Serve immediately. Serves 4 – 6.
