Chinese dumplings

Ingredients for Chinese dumplings / 4 people

For the dough:

500 g flour (type 55)

270 g of cold water

1 pinch of salt

For the filling:

2 shallots

1 onion

1/2 carrot (or small)

200 g beansprouts

1 can crab meat (about 200 g)

1 slice of ham (110 g)

1 tablespoon soy sauce

salt and pepper

1 tablespoon of parsley (optional)

PREPARATION for Chinese dumplings

1 Mix the ingredients for the dough and let stand at least 1 hour in the refrigerator in plastic film. Observe the proportions ( use an electronic balance) . The dough is soft, not sticky to the touch .

2 Put in a blender , the ingredients for the stuffing: onions, shallots , carrots , ham, bean sprouts ( drained and well drained ) and parsley. Mix and add the crab , soy sauce , salt and pepper. The mixture must be homogeneous. Refrigerate for a few hours so that the flavors blend . You watch the stuffing is not too wet . More stuffing is dry most editing is easy .

3 Divide dough into 4 equal pieces . Spread each piece of finely enough . Make circles with cookie cutters or a big glass. Put a small teaspoon of filling in the center .

4 Fold and seal the edges well with a little cold water. The ravioli is shaped like a half – circle . You can put the ravioli flat on the work plan and help you the tip of a knife to stick the edges.

Heat oil in large skillet over medium heat. Add onions and cook until softened, 3 minutes. Add garlic; cook 30 seconds. Stir in chili powder, cumin, salt and peppers; cook 1 minute. Increase heat to medium-high. Add beef; cook, stirring, until meat is no longer pink, 5 minutes. Stir in tomatoes; simmer 20 minutes. (Can be made ahead. Cool. Transfer to 2 1/2-quart microwaveproof bowl. Cover and refrigerate up to 24 hours. Microwave covered on High 12 minutes, stirring every 3 minutes, or until hot.) Stir in cilantro. Makes 8 cups. 1/2 lb Boneless Veal; cut into-1.5 -inch cubes1/2 lb Boneless Pork; cut into-1.5 -inch cubes1/2 lb Boneless Beef; cut into-1.5 -inch cubes2 lg Egg; beaten1 Seasoned bread crumbs;-enough to coat all cubes1 tb Vegetable oil; or other oil-for frying1/2 c All-purpose flour

Mock City Chicken Preparation

Preheat the oven to 350 degrees F. Pat all cubes dry with paper towels. Put the flour into a zip-loc plastic bag, put the seasoned bread crumbs into another zip-loc bag. Place a meat cube in the flour bag shake to coat all sides, dip cube in beaten egg it is important to cover it well with egg wash to get a good even coating of bread crumbs. Place the meat cube into the seasoned bread crumbs bag, shake and press to get a good and even coating. Impale the cube on a skewer (traditionaly … at least in our house…. it is a short wooden skewer). Repeat with remaining cubes (alternating veal-beef-pork if you are using all three) until they are all breaded and impaled. Heat the oil in a large heavy frying pan. Brown the skewers of meat in the hot oil, turning to brown all ”four” sides. Be very careful not to brown them too much (ie burn them!) as they will brown quickly. Remove them from the frying pan and place them upon a lightly oiled baking sheet. Bake at 350 degrees F, for 45 minutes or until they reach the degree of doneness you prefer. Notes: These fall firmly into the category of ”comfort food”, for some reason there are ”good feelings” associated with this one. This could also be done with any combination of the above meats or just a single one, it is also quite tasty as ”real chicken” using boneless chicken cubes… but not quite the same. Getting an even coating of breading is the key to the success of this dish!
