Theonion is a vegetable plant, widely used in kitchen, including the bulb, made upof white, fleshy leaves are covered with fine yellow peel, brown, red, blue,purple or white.

Thestems are green, round and hollow, and are decorated with white or red flowersballs when in season.

Flavor,shape and size of onions vary with the climate and variety. The most consumedvarieties are:

Spanishonion: the softer and more voluminous, often eaten raw

Redonion: the sweeter, often eaten raw

Pearlonion: also called “onion bell” is a small onion mainly used inmarinages or in some stews.

Itis also possible to obtain “green onions”, characterized by a bulbthat have not reached maturity; they are sold fresh with the stem mainly boot.Also called “spring onion” .In cooking, it is used as a spring onion.

Weplant to inside onion seeds six to eight weeks before the last frost then betransplanted to the garden about a week before freezing. The maturation periodlasts between 90 and 120 days, so it is possible to harvest fresh onions fromthe end of August.

Onionsshould be stored in a cool, dry and ventilated. Onions “strong” asyellow onions keep well is 2 to 3 months, while the sweet onions can be kept aslong. The red onion can be kept of 2 to 4 weeks. Green onions are sure to keepabout a week in the refrigerator.

Spanishonions are available from August to December and green onions from June toOctober.

Themain countries where the onion is cultivated are China,India, the United States, Iran,Russia, Egypt and Turkey.

Theonion is cooked in most countries of the world, as it naturally enhances theflavors of the dishes.

Indeed,regardless of the cultures, the onion is used to enhance revenues or as acondiment. Some also do not hesitate to eat it as a vegetable.
