Ingredients
1 kg potatoes, quartered
8green onions, chopped
5shallots
3 c. s. fresh cilantro
3 c. s. coarsely choppedfresh mint
2small chopped chillies
Chinesesalad dressing
60ml lime juice
1egg yolk
1 c. c. sesame oil
180ml peanut oil
2 c. c. mirin
2 c. s. chopped freshcoriander
Preparation Chinese salad food
Cookthe potatoes in water or steam then drain. Prepare the seasoning with lime
Putthe remaining ingredients in a bowl with the potatoes warm earth and seasoning.Stir before serving Chinese salad.
Whiskdressing a tablespoon of lime juice with the egg yolk and gradually pour theoil while whisking the mixture with an electric mixer until firm mayonnaise.
Gentlystir in the remaining ingredients.
Ingredients for Crab Casserole Florentine Recipe
2 tb Butter
2 pk Frozen spinach, chopped &
-drained
1 cn Cream of mushroom soup,
-condensed, undiluted
10 oz White sauce
1-1/4 c Swiss cheese, shredded
1 tb Fresh lemon juice
2 cn Crab meat (7 1/2 oz)
1 cn Waterchestnuts (6 1/2 oz.)
3 tb Grated Parmesan cheese
Crab Casserole Florentine Preparation
Melt butter. Add spinach and cook until all the liquid has evaporated. Stir in the cream of mushroom soup. Remove from heat and set aside. Combine white sauce, cheese, and lemon juice in saucepan. Cook over medium heat, stirring until cheese melts. Remove cartilage from crab meat. Add to sauce along with water chestnuts. In 10 casserole, layer the spinach and mushroom soup using 1/2 of the mixture. Top with half of the crab mixture. Repeat layer. Top with Parmesan. Bake at 300 degrees for 1 hour. NOTES : May be prepared 2 days in advance and refrigerated. Increase baking time 10 minutes.

1/4 c Cholesterol-free egg product
3 tb Evaporated milk
1 ds Cayenne pepper
4 Canadian bacon slices, warme
1-1/2 ts Lemon juice
1/2 c Butter
4 Frozen waffles, toasted
4 Egg, poached
Eggs Benedict Without Real Eggs Preparation
Approx. Cook Time: 15min For hollandaise sauce: In a heavy saucepan, combine egg product and lemon juice; stir over low heat (watching carefully so eggs don’t cook) until thickened. Slowly stir in evaporated milk until heated. Remove from heat and stir in butter and cayenne pepper until smooth. Assemble each serving in the following order: waffle, Canadian bacon and poached egg.
