Native to the Caucasus, quince has gradually spread to Central Europe and the Mediterranean countries. Its fruit, and the seeds contained by it, are today appreciated for their phytotherapeutic properties.

Quince, against cough

The quince is harvested at maturity, then left to rest. It is then cut and dried at 50 ° C. The fruit pulp, which contains in particular sugars, essential oils and some vitamin C, is used in infusion against troubles gastric, sore throat and diarrhea. Dried, the seeds are used as a decoction or as an infusion. At the rate of one to three seeds per cup, they would soothe cough.

Crushed, they are part of the composition of poultices to relieve inflammations joint or cracking. Quince finally finds its place in the kitchen. It can be eaten plain, but it is more generally used for making jams, syrups, compotes and other jellies.
