Ingredients for duck breast/ 4 people
2duck breasts
1cucumber
4tablespoons rice wine
8tablespoon soy sauce (Konimex Ketjap)
2large tablespoons of honey
2tablespoons sesame oil
cornstarch
1cube diluted in half liter of water
1large handful of cashew nuts
1teaspoon five spice
2large cloves of garlic
4 cm ginger
5spring onions (with green)

PREPARATIONduck breast, cucumber and cashews
1Cut the duck into slices about 1.5 cmthick. Prepare the marinade by mixing soy sauce, honey, 5 spice, honey, sesameoil, rice wine, pepper. Set the duck, stir a little and leave in the fridge 1hour.
2Slice the cucumber into cubes. To drain the duck keeping the marinade. Add 3tablespoons cornstarch duck and fry in a wok 1 minute. HEAToven to 400 degrees. Grease bottoms only of 12 medium muffin cups, 2-1/2×1-1/4inches, or line with paper baking cups. MIX brown sugar and 1 tablespoon bakingmix; reserve. Beat milk, egg and cranberry sauce slightly in medium bowl. Stirin 2 cups baking mix and the granulated sugar just until moistened. Fill muffincups about 1/2 full. Sprinkle with reserved brown sugar mixture. BAKE about 18minutes or until golden brown. Cool slightly before removing from pan. 1 dozenmuffins.

1 c Chopped pecans

Insaucepan melt brown sugar and butter. Turn into mixing bowl. Add eggs, one at atime, stirring well after each. Add flour. Blend well. Add vanilla and pecans.Stir thoroughly. Pour batter into a greased 9x13x2 baking pan. Bake 30 minutes.Cool, Cut into squares. Makes 12 squares.
