PREPARATIONduck breast, cucumber and cashews

1Cut the duck into slices about 1.5 cmthick. Prepare the marinade by mixing soy sauce, honey, 5 spice, honey, sesameoil, rice wine, pepper. Set the duck, stir a little and leave in the fridge 1hour.

Beat milk, egg and cranberry sauce slightly in medium bowl. Stirin 2 cups baking mix and the granulated sugar just until moistened. Fill muffincups about 1/2 full. Sprinkle with reserved brown sugar mixture. BAKE about 18minutes or until golden brown. Cool slightly before removing from pan. 1 dozenmuffins.
