Ingredients for Foo Yung omelette
12eggs, beaten
75 g crabmeat
75 g of small cookedshrimp, peeled
2stalks celery
40 g cooked ham, diced
3tablespoons. tablespoon chopped chives
1tsp. tablespoons of peanut oil
2tsp. tablespoons chopped fresh cilantro
2tsp. Coffee minced fresh ginger root
1clove garlic
80 g butter
saltand freshly ground black pepper
cilantrosprigs for garnish
2tsp. tablespoons soy sauce plus more for serving 8
Preparation Foo Yung omelette
Heatthe oil in a large skillet over medium heat. Add the onions, celery, ginger andgarlic and cook 1 minute, stirring.
Addham, crab, prawns, fresh coriander and soy sauce. Lower the heat and let themixture warm, stirring occasionally.
Heat20g butter in a pan. Pour aquarter of seasoned eggs into the pan and cook until they begin to take. Turnover and cook for another 2 minutes.
Keepwarm on a platter. Cook still three more omelettes. Divide the stuffing betweenomelettes and roll. Serve hot with soy sauce, garnished with coriander.

2 lb Ground round
2Eggs
1 c Sweet pickle relish
3/4 c Onion, coarsely chopped
3tb Worcestershire sauce
1 oz *bourbon
2Garlic cloves minced
1/4 c *green Bell pepper chopped
1/2 c *bacon, cooked & crumbled
-salt& pepper to taste

Itemsare optional Mix onion, relish, Worcestershire sauce, and any of the optionalingredients you wish to use, together. Be sure to get the eggs mixed incompletely. Roll meat out and make 16 thin patties. Spoon the pre-made mixtureupon the top of one patty. Place another patty on top. Press firmly to jointhem. Wipe up the mixture that runs out of the patty stack and spread over thetop of the patty stack. Either broil in your oven until they are as you preferthem or on a barbecue grill as you see fit.
