Itis a dim sum from the Province of Taiwan and is thefirst choice for office workers.

Ingredients golden rice beef

300gminced beef

½onion

100g broccoli

½carrot Seasoning

oliveoil

3tbsp soy sauce

 1 tbsp clear of Shaoxing wine

1tbsp sugar 1 tbsp oyster sauce

1tbsp potato starch

30minutes

Steps golden rice beef:

1.Wash broccoli and break it into small hand. Peel carrots and cut into pieces.

2.Cut the onion into thin slices and set aside.

3.Blanch broccoli and carrot. Remove and set aside.

4.Blanch the sliced beef. Once the beef changes color, remove and reserve.

5.Heat the olive oil in a pan, then add the onion. Sauté evenly.

6.Mix the seasoning, then pour the mixture into the pan. Cook until onion issoft.

7.Add the minced beef. Boil.

8.Finally, add the liquid starch (1 potato starch tbsp + 3 tbsp of water). Mixand serve.

4ea Large, meaty shortribs

1/3c Oriental toasted sesame oil

41/2 tb Peanut butter

4tb Brown sugar

21/4 tb Curry powder

3/4c Soy sauce

1/2tb Black pepper (fresh cracked)

1/2c Rice sherry wine

1/2ea Fresh ginger root

2ea Large garlic cloves (minced)

10ea Green onions

UnusualChinese Grilled Shortribs Preparation

Makeshortribs into short, flat strips. Begin by placing rib fat-side-up on cuttingboard and cut 1/4 high layer almost (but not through) the bottom-most sectionof the rib. Turn meat over and continue to make 1/4 layers until the rib iscompletely layered and is now one long strip. Using the edge of a Chinese knifeor otehr flat surface, pound meat until it is off an even thickness. NOTE:Chill the meat well. This cutting method will not work well on room temperatureribs. MARINADE: (Curry Based Blender Sauce) Blend all liquid ingredients in ablender for about 15 seconds at Blend speed. Grate the fresh ginger root andcombine with the minced garlic. Mince the white (only) portion of the greenonions. Add all ingredients to blender mixture and operate on low for about 45seconds. Rub suace onto butterflied ribs and refridgerate for 2 or more hours.NOTE: This sauce is excellent for chicken, too. Place ribs on grill, bastingoften with sauce until done, about 30 minutes depending on heat of grill. Watchcarefully to determine when done.

Source:Bev Hansen Melt bits and pour over other ingredients. Spoon onto aluminum foiland let harden. Freeze to keep fresh. Thaw before serving.
