Here is a colorful and responsible Candlemas recipe! A fluffy pancake cake, in 100% natural rainbow colors, and ultra-gourmet with its very original banana whipped cream. A dessert that is both beautiful, surprising and regressive, which draws the ingredients for its success from leftovers in the fridge!

Ingredients for 6 to 8 people

For the pancake batter: 500g T45 flour6 eggs 850 g of Lactel® Organic and Engaged whole milk 175 g melted butter + a little for cooking 2 sachets of vanilla sugar

Natural dyesFor the blue color: 2 teaspoons of powdered natural blue food coloring.For the green color: 1 crushed green kiwiFor the pink color: 3 crushed frozen raspberriesFor the purple color: 3 frozen and crushed blackberries or blueberries or cooked red cabbage juice.For the yellow color: 2 teaspoons of turmeric powder

For the whipped cream: 50 cl of full liquid cream 50g icing sugar 2 very ripe bananas

Preparation : 1 hourCooking and assembly: 20 mins

Preparation of pancakes

– Pour the sifted flour into a bowl and make a well in the centre.– Break the eggs into the hole thus formed, then add the melted butter and the vanilla sugar.– Using an electric mixer, beat at high speed until the mixture is smooth.– Then gradually add the milk, whisking constantly.– Divide the dough into 5 identical bowls and color each one with a natural dye to assemble your rainbow pancake cake.– Mix each color well.– Heat the crepe pan over high heat. Melt a knob of butter and pour a first ladle of batter.– Cook for 2 minutes, turn the crepe over and cook for another minute.– Repeat the operation until you run out of each different colored paste.– Then let the pancakes cool completely.

Preparation of whipped cream

– Place a bowl in the freezer for 5 minutes. Then, pour in the fresh cream.– Whip it with an electric mixer, gradually adding the icing sugar and increasing the speed until the cream thickens to become whipped cream.– In a small bowl, mash the very ripe bananas with a fork, until you obtain a fairly smooth cream.– Mix it with the whipped cream using a flexible spatula.

Assembling the pancake cake

– Place a first yellow pancake on a plate and cover it with a thin layer of banana whipped cream.– Repeat the operation until you run out of pancakes, alternating the colors to form a rainbow.– Place the pancake cake in the fridge until ready to serve.– When bringing it to the table, sprinkle the crepe cake with icing sugar and decorate it with seasonal fruits (kiwi, bananas, pomegranate seeds, etc.).
