Shrimp pork spring rolls

Ingredients

80 g of cooked rice

1package of rice paper

250grams of peeled shrimp

200g minced pork

1small piece fresh ginger

saltand pepper

1medium carrot, grated

2tbsp black mushrooms

1tbsp chopped parsley

2tbsp soy sauce

1/4of a small cabbage

1small bowl mix flour and water to paste

2tbsp oil

oilfor frying

afew parsley leaves

Preparation shrimp pork spring rolls

Softenthe mushrooms in warm water and cut them out.

Poachthe cabbage in salted water and drain. Place in a blender rice, cabbage,shrimp, ground pork, ginger, salt and pepper.

Transferthe mixture into a bowl and add grated carrot, black mushrooms, parsley and soysauce. Mix together and make fry 5 minutes. in 2 tbsp oil, stirring constantly.

Tomoisten the rice leaves and ease of use and cooking, place them between twoclean towels and slightly wet for 2 minutes.

Spreadrice paper and place in the lower part equivalent to 2 tbsp stuffing. Fold thesides and roll up like a cigar. Continue like this until all the stuffing.

Frythe spring rolls in a frying then drain on paper towels.

Servehot spring rolls on a bed of parsley or lettuce.

2 c Flour

1/4 c Chopped parsley

1tb Sugar

1tb Chopped thyme

1tb Baking powder

1ts Chopped fresh rosemary -or-

1/4ts Dried rosemary

1/2ts Salt

1/3 c Margarine or butter

1/2 c Milk

1Egg; slightly beaten

FreshHerb Scones Preparation

Heatoven to 400 degrees. Lightly grease cookie sheet. In large bowl, combine flour,parsley, sugar, thyme, baking powder, rosemary and salt. Using pastry blenderor fork, cut in butter or margarine until mixture resembles coarse meal. Stirin milk and egg just until moistened. On floured surface, gently knead dough 10times. Place on greased cookie sheet; roll or pat dough into 6-inch circle. Cutinto 8 wedges; separate slightly. Bake at 400 degrees for 15 to 20 minutes oruntil golden brown. Cut into wedges. Serve warm. Makes 8 scones.
