Ingredients for shrimp spring rolls
12rice cakes square 15cm
250g small prawns
120 g of bean sprouts
3large onions chopped
1tsp. tablespoons soy sauce
1piece of 3 cm freshginger root, grated
2large cloves garlic, minced
3tablespoons. Coffee cornstarch diluted in 1 tsp. water to soup
1egg, separate white from the yolk
saltand freshly ground black pepper
Preparation
Soakthe rice paper sheets in cold water (or hot, but it’s much faster). Then placeit on a clean, dry cloth.
Mixshrimp with onions, ginger, garlic, bean sprouts, soy sauce, cornstarch, eggyolk, salt and pepper.
Beatthe egg white lightly. Put a spoonful of filling in center of each sheet ofrice, spend a little egg white on the edges and fold into small packets,returning the ends.
Heatoil in a deep fryer and when a small piece of bread browns in 1 minute,carefully add 4 packets, seam side down. Cook 1 or 2 minutes. Remove with aslotted spoon and place on paper towels.
Servewith the sauce mixed well and lime wedges.

1 c Grated Swiss cheese
2 c Broccoli flowerets
1/4ts Salt
1/8ts Garlic powder
1/8ts Lemon pepper

Preheatoven to 350. Cook bacon until crisp, set aside. Beat eggs with cream andcheese. Stir in broccoli, salt, garlic powder and lemon pepper. Crumble bacon.Stir 1/2 of crumbled bacon into egg mixture. Pour mixture into a 9 inch pieplate. Bake at 350 F for 30to 35 minutes or until a knife inserted halfway between center and edge comesout clean. Top with remaining bacon.
