SweetPotato Croquettes PREPARATION

1Peel the sweet potatoes, rinse and pat dry. Bake with steam for 30 minutes.

2Peel the onion and chop it finely. Rinse and chop the chives it.

3Reduce the mashed sweet potatoes, add egg, onion and chives. Add salt andpepper and mix with a fork.

Ground Meatin a Skillet Preparation

To prepare meatballmixture, combine chicken, bread crumbs, egg white, 1/4 c skim milk, onions, bell peppers, salt, black pepper, and drymustard. Form into 12 balls. In a skillet, heat oil over medium heat. Addmeatballs and brown on all sides. Place balls around edge of skillet. Toprepare sauce mixture, combine cream of mushroom soup, remaining milk, andmixed vegetables. Pour into center of skillet. Simmer for 12 minutes and serve.

Greek LemonChicken Soup Preparation

Combine broth,lemon juice, carrot, onion, celery, soup base, and pepper in Dutch oven andbring to boil over high heat. Reduce heat, cover partially and simmer untiltender, about 20 minutes. Blend butter and flour in shallow bowl until smooth.Using back of fork, scrape butter mixture into hot soup a little at a time,stirring well after each addition. Simmer 10 minutes, stirring frequently.Meanwhile, beat yolks in large bowl of electric mixer on high speed until lightand lemon colored. Reduce speed and gradually mix in some of hot soup. Returnmixture to saucepan and cook until heated through. Stir in rice and chicken.Ladle soup into bowls. Garnish with lemon slices.
