PREPARATIONyakitori chicken skewers
1Cut the chicken into bite-size pieces.
2Assemble the skewers.
3 In a bowl, mix the soysauce, sake and sugar. Stir until sugar is melted.
4Heat 1 tablespoon of olive oil and cooked skewers, 2 minutes on each side.
5When almost cooked, add the sauce and simmer until thickened.
Finally
Oncethe sauce takes a lacquered appearance, use skewers and coat them with thesauce.

Awabi Sakami(Sweet Cooked Abalone) Preparation
Empty the canof Abalone into a small saucepan and add water. Bring to boil, reduce heat andsimmer uncovered for 10 minutes. Add Sake and Sugar and cook for another 5minutes, stir in Soya sauce and continnue to cook for 2-3 more minutes. Cool toroom temperature, cut the abalone into 1/2 thick slices and serve.

1 pt Cherry tomatoes1/2 c Tequila; or more1 sm Head leaf lettuce1 pk Dry Italian or blue cheese-dressing mix-or-1 tb Seasoned salt & pepper1 ts Pequin quebrado
InstantBloddy Marias Preparation
Rinse tomatoes,then pierce each with wooden toothpick. Place in single layer in a dish; pourin enough tequila to make a shallow layer. Let stand at least 30 minutes atroom temperature. To serve, cover a large platter with lettuce leaves,watercress or grape leaves; center the platter with a small glass of tequila, asmall glass of wooden toothpicks and a small dish containing salad dressing mix(or seasoned salt & pepper) mixed with pequin. Arrange tomatoes atopgreens. To eat, spear a tomato with a wooden pick, dip in tequila, then diplightly in salad dressing mixture. Makes 8-12 servings, depending on rest ofthe menu.
